Asian Pear Salad with Chicken and Roasted Pistachios
Serves

Ingredients
2 teaspoons
olive oil
½ Asian Pear
thinly sliced
70g
Nature’s Heart roasted pistachios, chopped
½ cup
any cheese you prefer (I would suggest Camembert!)
½ lettuce
chopped
200g
boneless chicken thigh, diced
1 tablespoon
lime juice
salt
pepper
rosemary
Method
Marinate the chicken thighs with salt, pepper and rosemary.
Heat oil in a non-stick pan over medium heat. Add chicken and cook until done.
Mix the cooked chicken, sliced pear, chopped pistachios, lettuce and cheese into 1 big bowl.
Season with salt, pepper and lime juice.
Serve and Enjoy!
